Tucked along a calm Nishiazabu street near the buzz of Shibuya, Sushi Shin is an intimate 16-seat counter where the season arrives one piece at a time. Chef Shintaro Suzuki trained in Tokyo’s famed sushi houses from a young age, refining classic Edomae techniques with a light, modern touch. Fish is sourced from across Japan at peak freshness, then carefully seasoned with salt or vinegar, sometimes lightly seared, and occasionally kissed with aromatic smoke from burning herbs. Watching the precise movements at the counter feels almost like a performance. It’s held a Michelin one-star for six consecutive years—and many Tokyo food lovers still return for “that” unmistakable bite.
